My boss brought in the most amazing cupcakes this week at work that his wife, Katie, made!
And they were made with Rumchata, yummy! A lot of people have asked for the recipe and here's what Katie gave me:
Start with 1 box Pillsbury Dark Chocolate cake mix. Instead of 3 eggs, use 4. Instead of water, use RUMCHATA, then add the 1/3 cup oil AND throw in a cup of sour cream and a cup of dark chocolate chips. Mix it all up. Put it in a gallon ziplock bag and cut of a corner for squeezing it into the cupcake tray. (cut the hole big enough to let the chips through!) Bake for approx 18 min. at 350*.
If you ever get a chance to see Milwaukee from the water...do it! I don't know what it is about the water but everything looks beautiful when you're on the water. I took these over the weekend and just looking at them calms me. We have a beautiful city enjoy it and enjoy what's left of summer:)
